This rich and flavorful sauce is the perfect match for bitter radicchio. It is incredibly easy to make and goes well with any type of (preferably fresh) pasta. My favorite pasta to have this with is gnocchi. The light and fluffy potato pasta goes well with the rich sauce.
Instructions to make Pasta & Sausages in Napoli Sauce:
- PASTA: Boil a pot (or a wok) of water. Add 2 pinches of Salt, 1 Tbsp of Olive Oil and then add the Pasta. Cook it until it is al dente. Remove, strain and set aside.
- SAUSAGES: Heat 2 Tbsp of Olive Oil in a large pan/wok until hot. Add 1/2 of the Onions, and fry until fragrant (10 sec). Add the Sausages and fry them until brown all over. Remove and set aside.
- SAUCE: Heat another 2 Tbsp Of Olive Oil until hot. Add the remaining Onions, Garlic and fry them until fragrant. Then add the Carrots, Celery and fry them for a few minutes. Next add the Tomato Paste, Water/Stock, Sugar and cook them until the Sauce is reduced slightly.
- ASSEMBLY: add the Sausages and Pasta to the Sauce, stir and mix well. [OPTIONAL, you can add greens here, mix well]. Then add the Cheese and mix well. Lastly add the Oregano or Thyme and mix well.
- SPAGHETTI: if you're using Spaghetti, then during ASSEMBLY, add all the other ingredients except the Spaghetti. Instead, serve the Spaghetti in a plate and pour the sauce on top.
