Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Focaccia al rosmarino (focaccia with rosemary).

The ingredients needed to make Focaccia:
- Take 500 gms bread flour
- Prepare to taste Salt
- Prepare 2 sachets fried yeast
- Prepare 2 tablespoons olive oil

- Prepare Rosemary
Focaccia Market Bakery. (Chef's Note: This may seem excessive, but focaccia is an oily crusted bread. This is why it is soooooooooo delicious!). Put the dough onto the Liberally sprinkle the top of the focaccia with some coarse sea salt and lightly drizzle a little oil on top. Bake the dough until the top of the loaf is golden.
Steps to make Focaccia:
- Place the flour, salt, yeast, olive oil and 300ml of the water into a bowl. Gently stir with your hand or a wooden spoon to form a dough then knead the dough in the bowl for five minutes, gradually adding the remaining water.
- Tip the dough onto an oiled work surface and continue kneading for five more minutes. Return the dough to the bowl, cover and leave to rise until doubled in size.
- Tip the dough out of the bowl and divide into two portions. Flatten each portion onto a baking sheet, pushing to the corners, then leave to prove for one hour.
- Preheat the oven to 220C/200C Fan/Gas 7. Drizzle focaccia with oil, sprinkle with fine sea salt &rosemary bake in the oven for 20 minutes. When cooked, drizzle with a little more olive oil and serve hot or warm.
Focaccia is a blank canvas for delicious toppings, so feel free to experiment and get creative. This classic recipe's got fresh rosemary leaves (which get crisp like little herb chips in the oven!) and crunchy sea salt. But you could add sesame seeds, cheese, olives, sun-dried tomatoes.
