Focaccia is a flat oven-baked Italian bread product similar in style and texture to pizza dough. Focaccia can be used as a side to many meals or as sandwich bread. Focaccia al rosmarino (focaccia with rosemary).

- Take 5 gm Dry yeast
- Prepare 150 gm water

Steps to make Focaccia:
- Mix the yeast with lukewarm water.
- Add flour, salt, sugar, olive oil and spice mix.
- Mix by hand until a ball forms.
- Knead it well for 15 minutes.
- Place the dough in a bowl and cover with wet cloth. Set aside for proofing until doubles in size.
- Degas the dough and flatten out on a table.
- Roll out to a large rectangle and place the dough on a baking tray with baking sheet.
- Spray the dough with water and place it aside for second proofing.(30-40 min)
- Dip your fingers in olive oil and push them into focaccia.
- Arrange the topping of your choice. Sprinkle with olive oil.
- Bake for 20 minutes in pre heated oven at 200°C.
- Remove from oven and brush with olive oil and serve warm.
Focaccia is a blank canvas for delicious toppings, so feel free to experiment and get creative. This classic recipe's got fresh rosemary leaves (which get crisp like little herb chips in the oven!) and crunchy sea salt. But you could add sesame seeds, cheese, olives, sun-dried tomatoes.
