  1. Make ready 200 grams pineapple cubes, fresh or canned but very well drained.

  3. Take 1 tbsp almond flakes optional
  4. Get dressing
  5. Make ready 1 garlic clove, crushed
  6. Get 1 medium oblong shallot, crushed or minced
  7. Get 1/2 small chilli, red, seeds removed, very finely chopped
  8. Take 2 tsp runny honey
  9. Prepare 1 tbsp light soy sauce or 1/4 teaspoon Worcestershire Sauce mixed with1 tablespoon of water ( if using Worcestershire Sauce and water drain of about half of the liquid or it will get to soggy ,after mixing with pineapple)
  10. Get 1 tbsp pinch of dried basil
  11. Prepare 3/4 tbsp torn fresh basil optional
Instructions to make Sig's Pineapple Salad:
  1. Mix the pineapple with the dried mint and put into a bowl. Add the almonds if using them
  2. In a separate bowl mix all dressing ingredients except fresh basil
  3. Pour dressing over the pineapple herb mix. Gently mix the torn basil under if using.
  4. Leave to stand for 15 minutes or do for flavours to infuse
