  1. Cut your filo pastry into equal squares and lay them into a small tartlet dish, brushing a little milk to glue them (you can use a cake tray)
  2. As you lay the second sheet, offset it, you’ll create a star, but you are actually creating a decorative wall. Repeat with the next layer. I put 3 mini sheets in.
  3. Next put about 2 teaspoons of Onion Chutney in the bottom, then crumble some goats cheese and rustically put it in, followed by some chopped sun dried tomato and sliced olives. Finish with a couple of basil leaves and (optional) sprinkle some cracked pepper and salt to taste.
  4. Preheat your oven but very low, around 100 (gas mark 2-3). Filo pastry can burn quickly or cook before the ingredients have blended so, slowly slowly, they only need about 5 minutes
  5. I’ve served mine with a little Tapenade and Balsamic glaze. An ideal starter which can be prepared and refrigerated in advanced or it can be served cold after cooking.
